  • ½ a cup of fresh spinach leaves (washed & drained thoroughly)

Directions:

  1. Heat pan using medium heat. Coat the pan lightly but evenly using non-sticky or olive oil.
  2. Sauté the artichoke hearts and onions until they are slightly brown. Add the spinach leaves and sauté gently.
  3. Whisk the eggs together in one bowl. Then pour the eggs on the vegetables then scramble gently.
  4. After ½ a minute, the egg will start to solidify, leave it. And reduce the heat to low.
  5. Sprinkle the feta cheese evenly on top of the omelette.
  6. Leave it to cook for about 45 seconds. Fold the omelette in two and serve.

3. Veggie Cheese Omelette

  • 2 or 3 egg whites and 1 whole egg
  • 1 oz. (¼ cup) of mozzarella cheese
  • ½ cup mushrooms (washed & sliced)
  • ½ diced onion
  • ½ cup spinach leaves (washed & thoroughly drained)
  • 1 tablespoon off green pepper, diced
